I’ll admit. I reach for that blue box of macaroni and cheese far to often. It’s a sure fire win that the kiddos will love when I’m in a hurry or have gave up on getting them to eat anything else. It seems that no matter what they always will eat boxed macaroni and cheese. Some days it’s such a fight to get them to eat that I’m totally fine with that box of golden deliciousness!

I grew up on the blue box Mac and Cheese. I had never had homemade macaroni and cheese until I was in my mid-teens and I decided I was going to make my own. I’m pretty sure it was out of NEED and not WANT because we were out of the boxed kind and I had a need for some macaroni and cheese.

Apparently it was a hit because my little brother started asking for homemade macaroni and cheese every single time we were going to have macaroni and cheese. Let me tell you, that was a lot. Especially during the summer when we were home for the summer. It was sort of my specialty lunch dish. Why is lunch such a hard meal to figure out what to make? Does anyone else struggle with this?

  • Use a combination of cheese for best taste. I, personally, love the sharp cheddar and mozzarella combo. If you want to kick it up a notch use Pepper Jack!
  • Grab a block of cheese and grate it yourself with a boxed grater for the best results. Pre-shredded cheese has “stuff” added to it so it doesn’t clump together. It also doesn’t melt as well. For that perfectly cheese, gooey mac and cheese grate your own cheese!
  • I prefer 2% or whole milk when I’m making this pressure cooker mac and cheese. You can use a low fat milk but for best results user a higher fat content in your milk.

Don’t buy that pre-shredded cheese! I mean you can, but it will not achieve this gooey factor that I think you want. There is “stuff” to make it not stick together. When you grate it yourself you will notice that it does clump together because it’s fresh!

Ingredients

  • 1 (16 oz)boxelbow noodles, uncooked
  • 4c.warm water
  • 1Tspgarlic powder
  • 1/2tsppepper
  • 1/2tspsalt
  • 2c.freshly grated Sharp Cheddar Cheese
  • 1c.freshly grated Mozzarella Cheese
  • 1/2 - 1c.milk

Instructions

  • Pour the noodles into the pressure cooker. Add water, garlic powder salt, and pepper. Stir.
  • Put the lid on the pressure cooker and make sure the vent is set to 'sealing'.
  • Press the 'Manual' button and set the timer to 4 minutes.
  • Once the noodles are done cooking place towel over lid of pressure cooker and switch the vent to venting. When the quick release is done remove lid from pot.
  • Turn pressure cooker to 'saute' and add in cheese and 1/2 c. milk. Mix until cheese is melted. If you would like the cheese sauce thinner add more milk.
